Grilled Lamb Keftas

INGREDIENTS:

 

1-1 ½  lb of ground lamb

1 small-medium onion

1 shallot

3-4 sprigs of flat leaf parsley

3-4 sprigs of fresh cilantro

1-2 sprigs of fresh thyme

1-2 springs of fresh mint

1 tsp paprika

1 tsp cumin

½ tsp of cinnamon

½ tsp of cayenne

Salt & Pepper

 

Yogurt Dressing:

1 cup of plain Greek yogurt

2 Tbsp each finely chopped fresh mint,  fresh parsley and fresh cilantro

Add garlic, salt, pepper to taste

Stir together

DIRECTIONS:

 

Place ground lamb in a large mixing bowl.

Add onion, shallot, and fresh herbs to food processor and pulse until smooth (or finely mince by hand).

Combine meat, processed onion/herb mixture and spices into mixing bowl, and mix well. (I use my hands to incorporate everything really well)

Cover and chill the mixture for 1 hour

Shape the meat into small sausage shape onto wooden skewers.

Grill the keftas for 3-4 minutes per side, turning once.

Serve immediately with yogurt dressing.
