Herb Grilled Lamb Chops
INGREDIENTS:
This is a simple way to use one of your larger cuts of lamb.
Simply make a rub using salt, pepper, cumin, chipotle pepper, smoked paprika, and cayenne.
Apply generously around the outside of your lamb roast.
Finely chopped one onion and layer that along with two heaping spoonfuls of minced garlic to bottom of crockpot. Set in your roast with the fat cap facing up.
Add just enough veggie stock to cover the onions and touch the bottom of your roast.
Set crockpot on low.
Take the kids to school and go about your day. Move steers, check dogs, check sheep, go hit county voting and by dinner time this will be ready to serve.
Take out and shred it. For carnitas, reduce the au jus and serve with tortillas with the reduction sauced back over the meat. The other option is to put it on good hoagie rolls with the au jus on the side like a French dip.
